The Swag's Vegan Blueberry Cobbler

There is nothing quite like warm summer days and fresh fruit cobbler to make everything in the world seem just right. Winter works too, snuggled under the covers on the couch with a generous helping! But how do you make an American classic without the starchy, sugary unhealthy ingredients?

Enjoy on a patio with a nice glass of red wine or your favorite evening brew. Serves 4-5.

Ingredients:

Blueberry filling

  • 3 x cups of cleaned blueberries
  • 3 x tablespoons pure maple syrup
  • 1 ½ teaspoon of vanilla extract
  • 2 x teaspoons of corn or tapioca starch
  • ½ teaspoon of cinnamon
  • Touch of salt 

Crust

  • ½ cup wheat flour
  • ¼ cup raw sugar
  • 1 teaspoon of cinnamon
  • 3 tablespoons of coconut oil
  • Touch of salt

 

Directions:

  • Preheat your oven to 350 degrees Fahrenheit (180 celsius).
  • Combine your crust and filling in two different mixing bowls. 
  • You can make one giant cobbler or place a bit of mixture into individual ramekin by first layering the bottom of your baking dish with the blueberry mixture and then topping it with the crust mixture.
  • Bake for 30 minutes or until you see your blueberry mixture bubble from under the crust.

Top your cobbler with a dollop of Greek yogurt or your favourite frozen yogurt. Greek yogurt will not only provide protein and calcium, it has natural probiotics to aid your gut health.

If you wish to top your cobbler with Greek yogurt, consider soaking chia seeds in it prior.
