One-Tray Veggie Bake Recipe

This one-tray veggie bake means we can spend more time with family and friends, while the oven does all the work. 

One of our favourite and simplest versions, with mixed vegetables, a little oil and black seed, this wholesome bake can be made anytime of the year, with any vegetables you have in the fridge that are in season! 

Serves: 4-6 

Time: 10 minutes prep & 38 minutes cooking time


  • 1- 4 large potatoes
  • 1 red capsicum
  • 1 broccoli
  • 3 stems of cavolo nero kale
  • 1 tin of kidney beans
  • 1 bunch of coriander
  • 2 tbsp olive oil
  • 1 tsp cracked salt and pepper
  • 2 tbsp black seed


  1. Preheat the oven to 190 degrees celsius 
  2. Wash and chop the potatoes, broccoli and capsicum and add them to your tray
  3. Pour over the kidney beans and mix everything together in the tray
  4. Drizzle with olive oil and top with salt, pepper and black seeds
  5. Place in the oven for 30 minutes
  6. Remove from the oven and add the roughly chopped kale
  7. Place back in the oven for a further 8 minutes
  8. Remove from the oven and serve with a generous sprinkling of coriander
