Coconut Rice Pudding with Stewed Mixed Berries

With its rich coconut flavor, creamy rice pudding, and juicy stewed berries, this dessert combines sweet paradise and homey comfort. Ingredients for the Rice Pudding:

  • 200g uncooked jasmine rice (or any short-grain rice)
  • 4 ½ cups coconut milk (we're going tropical, baby!)
  • 1/4 cup of maple syrup or coconut nectar (or more if you're feeling naughty)
  • 1 tsp of vanilla extract (or more if you're feeling vanilla-y)
  • 1 tsp ground cinnamon (because we love cinnamon)
  • A pinch of salt (just a pinch, unless you're feeling salty)

Ingredients for the Stewed Mixed Berries:

  • 1 ½  cups fresh or frozen mixed berries (whatever floats your boat, but we suggest strawberries, blueberries, and raspberries)
  • 1 tbsp pure maple syrup or coconut nectar
  • 1/4 cup of water (just to give the berries a little wiggle room)
  • A squeeze of lemon juice (because we're fancy)

Method:

  1. Add the rice, coconut milk, cinnamon, vanilla extract, and pinch of salt and cook over medium heat, stirring occasionally, for about 20 minutes, or until the rice is cooked and the mixture is thick and creamy. If it's too thick, add more water or coconut milk. If it’s too thin and the rice is cooked, add a small mixture of water/cornstarch (1 tsp cornstarch and 1sp water). Turn off the heat and stir through maple syrup for a further 2 mins.
  2. Next, let's stew some mixed berries. Combine the mixed berries, maple syrup, water, and lemon juice in a small saucepan, and cook over low to medium heat with lid on until the berries have broken down and the mixture has thickened, for about 10 minutes. Stir occasionally to make sure it’s not burning. Allow to cool slightly. 
  3. Now it’s time to combine the rice and berries in a beautiful, delicious, and hilarious way! Grab a bowl, and spoon some rice pudding into it. Then, spoon some stewed mixed berries on top. Repeat until you have a bowlful of yumminess.
