It’s leek season, and we’ve got a creamy recipe in our pocket that you can serve as a pre-dinner entree, a side dish or as a sauce with pasta. You can even add smoked salmon to it for a good source of protein.

Ingredients:
- 4 leeks
- 25 g butter
- 1 big shallot
- 30g crème fraîche or liquid cream
- 2 tbsp white wine
- Salt and pepper to taste
- 2 tbsp water
Method:
- Thoroughly wash the leeks and slice them very thinly
- Peel the shallot and chop finely
- In a pan, melt the butter, add the leeks and the shallot
- Add white wine and water, cook on a low heat, cover and let it simmer for about 20 minutes. Stir from time to time and add more water if needed
- After 25 minutes, add the crème fraîche, salt and pepper, stir and let it simmer uncovered for about 10 minutes
