It will blend well with pasta salad, as a fish dressing or savoury spread on a sandwich. We promise this punchy pesto will be a welcomed addition to the many picnics enjoyed with family and friends that await us in the warm days ahead.
Serves: 1 cup
Preparation time: 10 minutes
Ingredients:
- 60g radish greens
- ⅓ cup of olive oil
- ¼ cup of parmesan cheese
- Juice of ½ lemon
- 1 small garlic cloves
- ½ cup of almonds, macadamia, pistachios or pine nuts (chopped/slivered)
- Salt and pepper
Method:
- Carefully wash the leaves to get rid of soil and any debri and leave them to dry
- Combine all the ingredients in a blender or food processor
- Blend until smooth
- Add additional olive oil to make a smoother pesto
- Add additional season to taste
